We are the Instroom Academy. A restaurant, but not just any restaurant. The personnel have often left everything behind in their home countries. They are fleeing violence or looking for a better life, free from hunger and poverty. Memories are typically all they have left. For many of our trainees, this means a taste of home in the form of recipes handed down by their parents and grandparents.
Like you and me, these people are keen to make their dreams come true. The Belgian hospitality industry is crying out for well-trained professionals. At the Instroom Academy, we marry dreams with practice. We start with traditional techniques and respect for authentic methods but, together with our trainees, we go in search of something new. Many of our students come from the other side of the world and are therefore unfamiliar with ‘seasons’. At the Instroom Academy, we only work with seasonal products from local farmers, but use global techniques to prepare them in surprising combinations. Every dish is an ode to the country and culture of the student who inspired it.
Everything prepared for this popular festival comes from the heart, born from conversations and connections between the Instroom Academy students and Seppe Nobels, as well as through the support of the visual artists in the Instroom Art team. It has been a quest for the fieriest, loveliest and warmest memories of people’s homelands while also respecting the local terroir and Mother Nature’s rhythms. Together, we will turn the Pirate Pavilion into a home from home. Welcome!
